Maybe you’ll be taking this weekend to get into Fall decorating mode to help usher in the season. Straw and cornstalks are Fall staples, as are pumpkins and other types of squash. Not only are squash handy for adding to the decor, but they are incredibly delicious. They are an important part of many cultures worldwide, and along with maize and beans, squash has been depicted in artwork of Native peoples of the Americas for at least 2,000 years.
They’re often partnered with corn and beans because of the Native legend of “The Three Sisters,” where corn, beans, and squash are three inseparable sisters who only grow and thrive together. You can read more of the story HERE.
The number of species in the squash family reaches as many as 30, and five of those are grown worldwide for their edible fruit. There are many different varieties withing each species.
The edible squash are usually divided into summer and winter categories. Forsythe Family Farms 2009 Inc’s most popular summer squash is zucchini, which they brought in a great crop of this year. The winter varieties they have in the farm market are Acorn, Sweet Mama, Sweet Potato, and Spaghetti Squash.
I remember watching my parents eat spaghetti squash when I was a kid and thinking it didn’t look appealing at all with its gooey insides. I should have been brave enough to give it a try because now I really like squash, and I could have been enjoying it all these years!
