Do you ever find yourself daydreaming over the amazing breakfast skillets they serve at restaurants like Denny’s & Cora’s? We do. Turns out you can have this delicious meal from the comfort of your own home with our ‘egg & potato breakfast scramble for one’ recipe.
All you’ll need:
1 large (or 2 medium) Yukon Gold potato
1/4 cup of water
2 tsp of olive oil
3 eggs
1/2 of a green onion
1/3 cup of grated cheese (we used marble)
Salt, herbs & spices to taste
What to do:
Mix together the potatoes, water & oil and put them in a small [non stick] skillet.
Cover and bring to a boil, letting them cook for about 10 minutes or until the potatoes begin to sauté.
Uncover them and stir them, letting them get lightly browned.
Add your spices.
In a separate bowl, scramble together 3 eggs.
Dice your green onion.
Pour the eggs & onion into the skillet.
Scramble everything together until the eggs set.
Remove from heat.
Sprinkle the top with grated cheese, and enjoy!
The best part about this recipe is that you can make it your own – add things like bacon, sausage, fresh peppers… you name it! Experiment with what works for you.
